Our homemade Southern Country and Cajun Foods were developed for concessions, catering and panned take-home meals, but they have really brought our concession operations to a whole new level as well. Show attendees and vendors are thrilled to be able to get this kind of delicious, hot home-cooked food. And, with as much feedback as we get from all of the shows, meetings and events we do, we know how good it is!
Below are the most requested entrees. We usually have our own secret recipe homemade cornbread muffins or fried hot-water cornbread with each one.
Pulled Pork- Slow smoked for several hours with our own secret recipe barbecue sauce; great on sandwiches or just eat it by the handful. Used for pulled pork sandwiches, pulled pork street tacos, pulled pork nachos, pulled pork Frito pies, etc.
Beef Brisket- Slow smoked Texas-style Beef Brisket; so good! Same uses as above.
Beer Can Smoked Chicken- Slow smoked chicken, deboned/shredded. Same uses as above.
Primo BBQ Sauce- Secret recipe NWLA-style barbecue sauce in single use packets and 8-ounce jars.
Breakfast Burritos- Homemade with scrambled eggs, diced ham or sausage, and cheese hand rolled in a soft tortilla.
Gumbo – Made from scratch Chicken & Smoked Sausage Gumbo and a separate pan of rice. Add bread for a complete meal.
Red Beans & Rice – made from scratch Red Beans with Ham and Smoked Sausage and a separate pan of rice.
Cajun Jambalaya- Made from scratch Cajun Style Chicken, Smoked Sausage and Rice Jambalaya.
Chicken & Dumplings- Old-timey style chicken and biscuit-style dumplings like Momma used to make.
Beef Tips & Rice- Southern country favorite, a pan of beef tips with a pan of rice.
